Madeleines!
Since there was still a ridiculous amount of available light at 5:30pm, I didn't feel the usual Sunday afternoon lull and urge to nap, re-watch episodes of Arrested Development, and/ or participate in general laziness. Instead, I thought I would bake something (!!!), and though I had limited baking supplies, I realized I could make not one, but two batches of lovely madeleines without ever leaving the house!
If you're unfamiliar with these delights, they're simple shell-shaped cookies that can be made in many flavor variations. The outside is a bit crispy and the inside is soft and light. The batter is poured into a special shell-shaped mold and baked just like you would make cupcakes.
